Creamy Quinoa with Roasted Vegetables

This recipe has been my go-to recipe at school this year.  It’s super easy to make, and is good hot or cold.  Quinoa is a healthy grain that’s full of anti-oxidants, is anti-inflammatory and is high in vitamin E and fibre.


2 heads of broccoli
1 red pepper
1 sweet potato
1 cup of peas
2 cups of quinoa
1 tbsp apple cider vinegar
2 tbsp lemon juice
1/2 cup  grape seed, coconut or olive oil


1) Preheat oven to 400 degrees

2) Cut up vegetables into small chunks

3) Toss vegetables in oil and put in oven for about 40 minutes

4) Cook 2 cups of quinoa in 4 cups of water, bringing the water to a boil then cooking for 15 minutes

5) Boil the rest of the broccoli until very soft and let cool down

6) Add to a food processor with acv, lemon juice, and oil and blend until creamy

7) Wait for the veggies, add everything together and you’re all done!
