Curry Coconut Shrimp and Quinoa

Curry is my spice of the week.  I’m a weakling when it comes to spicy things, so I made this with mild curry. This recipe takes about 30 minutes, too, so it’s nice and fast!


1/2 zucchini
1/2 orange or red pepper
2 tbsp onion
1/2 medium tomato
1/4 cup coconut
1/2 cup shrimp
1/4 cup vegetable broth
2 tbsp grapeseed oil
3 tbsp curry powder
1 tbsp paprika
a pinch of salt


1. Boil 1cup of quinoa in 2 cups of water, then let simmer for 15 minutes on low.

2. While the quinoa is boiling, fry the onion in oil until slightly browned
3. Add the broth, vegetables, spices and salt and cook for 10 minutes on medium heat
4. Add the shrimp and coconut and cook for another 15 minutes on medium-low heat
