Tuna Wraps

This is a really easy and tasty lunch idea, and is very low in carbs.  I recently discovered that mayonnaise has sugar in it, so tuna recipes have become a little less creamy but more inventive.  This one has some dill added into it, and lots of veggies, too!

 

 

 

Ingredients
2 large lettuce leaves
1 can of tuna fish, drained
Grapeseed or olive oil
Dill seasoning
Rice wraps*
Cucumber, diced
Tomato, diced

* You can get these at an asian food market.  They are hard wraps that need to be soaked in water to soften them.

Directions

1. Prepare the tuna in a container or bowl with a few tablespoons of oil.  The oil is to moisten the tuna, so it really depends on how you like it.  Add a couple teaspoons of dill seasoning and mix!
2. Soak the rice wraps in a bowl of water for about 30 seconds each side. Blot with a paper towel and lay on a flat surface.
3. Lay the lettuce on the wraps and fill with tuna and veggies.  Wrap the lettuce up and then cover with the rice wrap. Voila!
