Creamy Hot Chocolate (and dairy-free to boot!)

One of the things I remember most about my childhood winters is coming in after a long day playing outside to a hot cup of chocolate with coloured mini-marshmallows, and sitting in front of a fire thawing our toes.  Sounds pretty picturesque, doesn’t it?

I decided to experiment a bit with a hot chocolate recipe- I’ve attempted making hot chocolate with almond milk before but haven’t had much success.  I’m happy to say that I stumbled on a good mix of cocoa, almond milk, and a hint of sweetness!

 

Ingredients

1.5 tbsp cocoa
10 drops of vanilla stevia
1 tsp agave syrup
1 cup unsweetened almond milk
1/2 tsp of cinnamon

Directions

1. Combine all ingredients in blender or food processor and mix until completely mixed.

This is the key to the hot chocolate.  I used to try to mix the ingredients by hand, but the cocoa winds up in a grainy film at the top of the milk.

2. Put in the microwave for about a minute.

The foaminess from the blending makes the hot chocolate really creamy and smooth.  Enjoy with a hint of peppermint for something even more delicious!
