Date Sweetened Chocolate Chip Cookies

These delicious, date-sweetened chocolate chip cookies will knock your socks off!  Not only are they gluten free, they’re sweetened with dates and have a caramel flavour that reminds me of brown sugar.  On my search for the perfect chocolate chip cookies, these come pretty close, and are definitely worth remaking.  They take a little longer to make because the dates need to be soaked, and the batter needs to be refrigerated overnight to solidify.

Dates are one of my favourite sweet snacks, but I’ve never tried using them as a sweetener.  There are a few different types of dates, two main ones being californian and medjool.  While my favourite is definitely the medjool, they are considerably more expensive.  There’s this amazing pharmacy I found out about this year that carries a huge pitted dates for only $2.99!  For baking, these dates are a good way to go, because they’re just as sweet and are a little easier on the bank account.

Ingredients
IMG_50771 cup dates, soaked in water (see directions below)
1.5 cups water
1 cup butter, room temperature
1/2 tsp xanthan gum
1.5 cup baking flour mix
1/2 cup almond flour
1 egg
1 tsp vanilla
3/4 cup chocolate chips (you can find my recipe for dark chocolate here)

1.  One hour before making the cookies, soak the dates in about 1.5 cups water

2.  Process dates and the water in a food processor until they form a paste

3.  Cut the butter into chunks

4.  Sift dry ingredients togetherIMG_5079

5.  Cream butter and date paste together until smooth

6.  Add the egg and vanilla and mix slowly until well combined

7.  Add flour and mix until just combined

8.  Stir in the chocolate chips

*The mix is very liquidy, so this next step is really important!

9.  Refrigerate your dough overnight or until solid

10.  Preheat oven to 350 degreesIMG_5083

11.  Roll cookie dough into inch round balls and place on cookie sheet, pushing down slightly with a fork

12.  Bake for 20-25 minutes

Enjoy straight from the oven!
