Lentil and Sweet Potato Patties












Lately I’ve been looking into vegetarian cooking and the best way to make healthy, filling meals that are tasty and interesting.
I’ve wanted to make these veggie patties for a long time, so when my family asked for a vegetarian meal I thought these would be fun to try!


3-4 sweet potatoes
1.5 cups lentils
1/4 cup fresh parsley
1 cup and 1/2 cup quinoa flour, split
1 tsp cumin
1 tsp chili powder
2 tsp garlic powder, paste, or 1-2 garlic cloves, diced
1/2 – 1 onion, diced
* the onion is optional; without it the patties will have a sweeter, lighter flavour
1 tsp Italian herbs
1 tsp black pepper


1.  Preheat oven to 425 degrees

2.  Boil 2 cups of water and add lentils.  Reduce to a simmer and cook for 30 minutes, the drain.

3.  Peel and cut sweet potatoes into chunks

4.  Cook sweet potatoes for 1 hour, or until very soft

5.  Mash sweet potatoes and lentils togetherIMG_5025

6.  Add spices, garlic, onion, and flour and mix well

7.  Form into patties, squishing the patties together well

8.  Refrigerate the patties for at least 1/2 an hour
*This is really important for keeping the patties together

9.  Preheat oven to 350

10.  Cover patties lightly in flour and brown in a fry pan or griddle with a tbsp of olive oil, then bake for 40 minutes

11.  Serve with a salad or any other veggies!
