Dijon Chicken with Beets and Beans

Here’s a really quick recipe for a filling and colourful dinner! IMG_5246

Ingredients (serves 2)
2 chicken breasts
a handful of green beans
1 medium beet
olive oil
3 tbsp dijon mustard
1/4 cup white wine1 cup vegetable broth


1.  Wash, peel and cube the beet

2.  Wash and cut the ends off of the green beans

3.  Fill a small sauce pan about a 1/4 full of water, and bring to a boil.  Add beans and beets.  Cook until the chicken is finished or until vegetables are slightly softened.

4.  Add a tbsp of oil to a frying pan (unless using a non-stick pan) at medium temperature.

5.  Mix dijon mustard, wine, broth, and basil to taste in a small bowl

6.  Add chicken to the heated frying pan.  Cook for about 5-10 minutes, or until slightly browned

7.  Pour the sauce mixture and stir into chicken.  Cook for another 15-20 minutes until chicken is no longer pink inside.

8.  Serve with a dab of butter on the vegetables.
