Pumpkin Oatmeal Chocolate Chip Cookies

Welcome to pumpkin baking season.  Fall is here, the leaves are turning, rain is falling (read: pouring), and the pumpkin recipes are coming.  My first pumpkin recipe of the year is really more of a shout-out to Beth at Tasty Yummies, because I didn’t need to change anything about her recipe, and all I ended up changing was the sweetener.  I used coconut palm sugar in place of the honey, because I didn’t have honey when I was baking.  Okay, I may have also substituted chocolate chips for raisins, as well, but I swear that’s it.  You can find the recipe here – these cookies are absolutely wonderful!  They’re chewy and soft with just enough pumpkin flavour, and are grain-free since they’re made with almond flour.  Try them out!
