Baked Salmon and Greens

Friday nights are generally my fancy dinner nights.  It’s one night of the week I have the whole evening to relax and make a nice meal.  The last few weeks have been very busy.  I had friends visiting for my birthday a couple weeks ago, so we were busy having fun and eating all the junk foods, making cupcakes, and catching up.  It’s been a while since I’ve cooked a meal at home.  I haven’t  had fish in forever, so I decided it would be a salmon night.  Then I found brocollini at the grocery store; I’ve always wanted to try brocollini but it’s always so expensive.  On Friday, however, it was on sale!  I decided to try it out, and wow, it was so tasty!  Really sweet and hardly at all like brocolli.  I roasted it in the oven and it was slightly crispy.    IMG_5381

Ingredients
2 fillets of salmon
salt
garlic powder
4 tsp lemon juice
12-15 brocollini stems
15 green bean stalks
2 tbsp olive oil
coarse sea salt
rice noodles
Pesto
approx. 1 cup fresh basil leaves
1/4 cup olive oil
2 tsp salt
1 tbsp lemon juice
1 tsp pepper
1/4 cup almonds

Directions

1.  Preheat oven to 350 degrees celcius

2.  Wash brocolini and beans thoroughly

3.  Cut off the ends of the beans, and the last inch or so of the brocoliniIMG_5380

4.  Toss the veggies, olive oil, sea salt, lemon juice and pepper

5.  Bake for 30 minutes

6.  Meanwhile, sprinkle salmon fillets with 2 tbsp lemon juice, garlic, and pepper until lightly coated

7.  Bake in oven for 20-25 minutes, until the meat flakes slightly

8. While the beans and salmon are cooking, puree the pesto ingredients in a blender

9.  Cook the noodles according to the package

10.  Mix the pesto in with the noodles

11.  Serve!
