Balsamic Vinaigrette Salad Dressing

Lately I’ve been having trouble coming up with a decent salad dressing that’s more than just balsamic vinegar and a bit of olive oil.  This one’s a keeper, though!  It’s creamy, and a little bit of honey takes the bite out of the vinegar.  Also, it took me less than a minute to make, which is also a plus.

1 cup olive oil
1/2 cup balsamic vinegar
2 tbsp dijon mustard
1/4 tsp salt
1 tsp ground pepper
1 tbsp honey


1.  Blend together and serve on salad, or refrigerate and use it later!
