snickerdoodlesHow is it already new years eve? I haven’t posted a recipe in quite a long time, and surprisingly I didn’t do very much baking this month! School ended and I started working, went back home for the holidays, and was spoiled by my mom’s kitchen skills.  I do have a few recipes to post, however, including a newer, better Earl Grey cupcake recipe, and amazing homemade Oreos.

For now, I have a yummy, quick snickerdoodle recipe to share.  It’s completely grain free, has limited sweeteners, and is dairy-free, as well! Most snickerdoodle recipes seem to be pretty similar, so mine is a gluten-free, sugar-free  version of many others.

2 cups almond flour
1/2 tsp cream of tartar
1/2 baking soda
1 tsp powdered stevia
1/2 cup xylitol
1/2 tsp xanthan gum
a pinch of salt
1/4 cup coconut oil, melted
1 egg
1 tsp vanilla
4 tbsp cinnamon


1. Preheat oven to 350 degrees celcius

2. Mix dry ingredients in a larger bowl

3. Mix wet ingredients together and whisk until well combined

4. Combine wet with dry and mix until just combined

5. Put cinnamon in a small bowl

6. Form the dough into small, inch in diameter balls and rolls in the cinnamon

7.  Using a flat surface (spoon, bottom of a jar) press the cookies into the cookie tray

8. Bake for 10 minutes or until solid
