Baked Tarragon Salmon with Stir-Fried Green Beans

I wasn’t really planning on posting my recipe from dinner tonight, but it turned out so well that I had to share!IMG_7168I’m particularly excited about these green beans. They were given to me and come straight from a personal garden. Tonight I tried something different with them, I stir fried them with some sesame oil and coconut aminos. I know I use coconut aminos in nearly every recipe, but they just add so much flavour to things and make a great sauce addition! The beans ended up being slightly sweet and tangy. Baked Tarragon Salmon with Stir-Fried Green Beans

Ingredients
  1. 3 salmon fillets
  2. 2 cups green bean, ends cut off and rinsed
  3. 1/2 yellow onion, diced
  4. 1 clove of garlic
  5. 1 tbsp sesame oil
  6. 2 tbsp olive oil
  7. 1 tbsp lemon juice
  8. 1 tbsp coconut aminos
  9. salt
  10. tarragon
  11. chives
Instructions
  1. Preheat oven to 350 degrees.
  2. Sprinkle salmon with a bit of olive oil, tarragon, and chives, then wrap in tin foil and bake for 25 minutes.
  3. In a fry pan on medium heat, heat olive oil then add onions and garlic. Sautee until onions are slightly brown and translucent.
  4. Add beans, lemon juice and coconut aminos and turn to medium-low heat. Fry beans for about 15 minutes, adding sesame oil about halfway through. After 15 minutes, add 2 tbsp water and cover the fry pan to steam the beans for another 10-15 minutes.
  5. Unwrap salmon and bake at 425 for 10 minutes, or until the skin on the bottom is no longer translucent.
  6. Sprinkle the beans with salt, and serve with rice, pasta, or quinoa!
