Summer Solstice Smoothie

IMG_0217Happy summer everyone! Today we celebrate summer solstice, and what better way to celebrate than to enjoy a refreshing, fruity drink outside in the sun?

There’s a juicy watermelon sitting in my fridge just begging to be made into something tasty, so instead of just cutting it up and eating it, I blended it up and sipped it out on the patio! This drink took all of 2 minutes and is very hydrating and surprisingly filling. I added some chia seeds to thicken it a bit, and add some more nutrients to this light mixture.

So, go enjoy this wonderful new season, eat all the fresh fruit you can find, and stock up on that vitamin D!IMG_0215

Summer Solstice Watermelon Smoothie

A light, fruity, freshing smoothie of watermelon and raspberries.

Ingredients
  1. 2 cup cubed watermelon
  2. 1/4 cup frozen raspberries
  3. 1/2 cup coconut milk
  4. 1 tbsp chia seeds
Instructions
  1. Blend all ingredients in a high speed blender, and enjoy with a few raspberries on top!
