Strawberry Banana Soft Serve

IMG_0231It is definitely summer.  We have had weeks of hot, sunny weather here on the west coast and I have been craving cold food every day of it! So this morning I decided to have dessert for breakfast. Kind of like my morning smoothie, but it feels more like eating ice cream.

There’s really no good name for dairy-free ice “cream.” Frozen dessert, frozen treat, ice “cream,” ice “dessert.” Nope, nothing. So I’ll just call this soft serve, because that sounds okay, right?

You can top this with granola, more fresh fruit, chia seeds, coconut…the list is endless! Or, for an ever more desserty flavour, some chocolate chips.  Make this overnight and have it completely frozen to eat the next day!

Strawberry Banana Soft Serve
Serves 1
Frozen banana, strawberries and coconut milk. Simple, cold, and refreshing.

  1. 1 medium frozen banana
  2. 5-8 frozen strawberries
  3. 1/2 cup full fat coconut milk
  1. Blend all ingredients in a high-speed food processor
  2. Place in the freezer for 30 minutes or until more solid
  1. You can use fresh strawberries, but the mixture will take slightly longer to freeze
  2. Toppings: coconut, chia seeds, chocolate chips, fresh fruit, granola
